Here are all the things I ate in a day!
Today was a pretty good day. Well, sort of? Corey and I made a deal that for every day that I hit the gym, he will eat vegan. So I’m telling myself that I will do this every single day and then ta-da! I will have made another vegan, haha. I woke up at like 6:30 am and went for a run on the treadmill. It was nice that I had the gym to myself! And then at my first work appointment I completely threw out my back. Sorry, animals, I’m not sure if I can make it to the gym tomorrow 🙁 Maybe I’ll just do bicep curls or something? Idk! Anyway, before I soak in a hot bath, here’s my food for the day!
Since I woke up super early, I had a lot of time to enjoy the morning. It was kind of nice. I might secretly be a morning person after all? I did enjoy having time to make myself a bowl of tofu scramble for breakfast! Just some red onion, a lot of spinach, and some crumbled up tofu. Seasoned with turmeric, salt, pepper, and nutritional yeast! Then topped with salsa! Paired with my morning drug of choice, of course. Also try to ignore how weird my almond milk got in my coffee.
If you follow me on instagram you know that I ate this and instagrammed it last week! Well, this is quickly becoming my favourite lunch. It comes together soo quickly, tastes amazing, and fills me up without feeling too heavy. Spinach and arugula, zoodles, quartered strawberry tomatoes, and a lot of vegan parmesan. I liked this so much that I might just give this dish its own post in the very near future.

I totally screwed up my calories with this, but that’s like kind of ok with me today. I made this maple almond biscotti on Sunday and it wasn’t super perfect, but I still enjoyed it. I am going to keep working on this recipe so stay tuned!
I hobbled my way back home from work and I just needed a big, warm, bowl of comfort food. So I made this African Peanut Stew. It was loosely based off of several recipes I looked at the other day. Basically just mashed sweet potato, chunky peanut butter, onion, garlic, tomato, kale, and spices cooked together in vegetable broth. I mixed in some sriracha to add a spicy kick! It was exactly what I needed. For the record, my back is still sore.. But I’m starting to feel better with the help of ibuprofen and self-pity.
Overall, I’m feeling pretty good about my food today. I only ate clean whole foods (well, tofu is semi-processed, but whatever) and everything was tasty. The calorie total for my day was 1288. Not bad! Especially since I got 2 full bowls of that stew, plus my biscotti! I’m alright with it.
And now I’m off to browse instagram from my bathtub.
