Today was a pretty normal Tuesday for me. There was absolutely nothing special about this day so if you want a glimpse into my real life then this is the post for you! This is what I ate in a day when I feel bad about being a piggy all weekend. This past weekend I went waaaaaaay over my predetermined calorie intake all thanks to my friends who like to eat. Okay, so maybe going out to eat 3 days in a row with 3 different people was my idea after all. Friday was just the usual gorging on takeout veggie sushi rolls with my one true love.
Then on Saturday….

And I wonder why the scale hasn’t moved in almost 2 weeks… So it’s safe to say that I’ve been trying to get back on track with eating healthy, whole plant foods. Also literally trying to get back on track because I decided to start running! Which is something I never thought I would ever be fond of but I got this Zombies Run app and the sounds these zombies make while chasing me are exactly the kind of thing to get my butt in gear. So this is the third day in a row that I’ve gone running and I hope to keep this up! I think I need new shoes so if anyone has a shoe recommendation then please let me know!!
Admittedly, my breakfast is kind of boring. I’ve been doing quick oats just about everyday for the past couple of weeks. It’s nice to have something warm in my belly on these cold winter mornings! This is just quick oats, cinnamon, a tiny bit of apple syrup, and some almond milk. Usually I add half of a banana instead of the syrup but all my bananas are too green today. And, of course, I drank all that coffee! I used to be a Starbucks everyday kind of person so I am very proud of myself for breaking that habit. I’ve realized that their coffee kind of sucks anyway and I don’t need those sugary drinks either!
Ohhh this lunch was sooo yummy. I’ve always been a fan of high-fat foods so being able to work a half of an avocado into my daily food plan makes everything worth it! This week I batch cooked some lentils and quinoa so I’ve been working those into a lot of my meals. I admit that I’m usually not a big fan of quinoa. Which is probably the one vegan stereotype that I don’t fit 😛 I don’t know what it is, I think I used to always under-cook it as a university student. I have it figured out now, but it always reminds me of all the birdseed-textured meals I used to eat. It was shameful. I am trying to rebuild my relationship with quinoa and this lunch definitely helped do that.
This is a bowl of red quinoa, green lentils, steamed kale, avocado, a thinly sliced radish, green onions, and some leftover potato-carrot cheeze sauce that I spiced up with sriracha. It was creamy, crunchy, fatty, and filling. After this I went on an afternoon run because I have a couple of hours to spare between my work clients on Tuesdays. I know, right? Free time! This is a big reason why Tuesday is one of my favourite days! I hope to turn these afternoon runs into another good habit!
For dinner I made a big mountain of pad thai! This picture has terrible lighting because it’s way too dark and I need to change some lightbulbs in my apartment. Regardless, I should have taken a side view of this so you guys understand just how much food this was. For the record, I absolutely love pad thai. In this pad thai there’s some brown rice vermicelli, zucchini noodles, tofu, broccoli, garlic, bean sprouts, carrot shreds, and green onions. I made the sauce with lime, soy sauce, peanut butter, sriracha, and a little leftover hoisin sauce that I had been meaning to get rid of. It was a little less sweet than a typical pad thai, but I think I liked it better this way. This one got Corey’s stamp of approval, too!
Overall, this was a pretty good food day. Days like this make me wonder how I could have ever eaten enough food to actually gain weight! This was less than 1200 cals and I felt satisfied all day! I was in under my calorie goal at 1,194. For the curious it was Breakfast: 201, Lunch: 448, and Dinner: 535. Giving myself a pat on the back for doing so great today. Good job, me.
I am pinkie promising you all that I will be posting my not-yet-famous french toast recipe this weekend! Get your spatulas ready!
