Guacamole is my all-time favourite food! Is that weird? Maybe. But I think a lot of people will agree that chips and guac are essentials for having people over. The Super Bowl is coming up next weekend and this is something for everyone to enjoy- veg, omni, alien, everyone. It’s been a hosting staple of mine for as long as I can remember!
Coming from So Cal, I am sort of a guacamole purist.. or guacamole snob.. I have a lot of opinions on guacamole. I think my strongest opinion is that I have absolutely no idea why people would ever think of adding mayonnaise to their guacamole. And I don’t understand why people would use guacamole flavouring packets, when you can make something better very very easily. PLUS. Those packets often have weird ingredients like… milk powder? Why? Why would anyone put milk powder in guacamole.. You want fresh, vibrant flavours in your guac. That means freshly squeezed lime juice, crisp tomatoes, and crunchy red onions. This is THE best guacamole, I can almost guarantee it. And please, pretty please, throw away those dreadful flavour packets and don’t you dare touch that mayonnaise!
The Number One Ingredient that matters the MOST here is: avocados. Obviously. You want ripe avocados! If you cut into an avocado too soon, it’ll be flavourless and too firm, too late and you’ve got something brown and mushy. When looking for avocados, you want one that is firm but gives a little when you press (gently) with your thumb. If you buy avocados ahead of time (you should, because trying to find the perfect ripe ones in store the day of is a big gamble), you can set them on the counter in a brown paper bag. And if they ripen too soon, sticking them in the fridge will help keep them from over-ripening. I think the avocado gods were smiling on me today because I found four.. FOUR perfectly ripe avocados in the store today.
I can go through a LOT of guacamole in one sitting. I’ve already eaten half of this bowl, shhh. If you’re like me, you may want to double the recipe. Especially because you’ll probably eat half of it while you’re preparing the rest of your finger foods before your guests arrive!
Best Ever Guacamole
- 4 ripe avocados
- 1/3-1/2 red onion, diced (depending on how large your onion is! I used 1/3 of a large onion today)
- 1 tomato (seeds removed and diced)
- 1 1/2 diced jalapeno (optional, but recommended!)
- 1 t salt
- 1 t ground cumin
- 1/2 t black pepper
- 1/2 t garlic powder
- 1/2 t chili powder
- juice from 1/2 lime (a big one!)
- Remove the pits and spoon the avocado into a large bowl. Mash with a fork or potato masher.
- Add the salt, cumin, pepper, garlic powder, and chili powder. Mix well.
- Stir in the onion, tomato, and jalapeno. Squeeze the lime juice on top and stir again.
- Serve immediately or cover and refrigerate.
